Ingredients
  

For the Dough
  • 2 cups Plain Flour
  • 1 teaspoon Salt
  • 1 teaspoon Ground Turmeric optional
  • 1 cup Frozen Unsalted Butter keep very cold
  • 1/2 cup Frozen Vegetable Shortening can substitute with more butter
  • 4-6 tablespoons Icy Cold Water use as needed
For the Filling
  • 1 pound Minced Beef or plant-based options
  • 2 cloves Garlic Cloves minced
  • 1 small Onion chopped
  • 1/2 cup Breadcrumbs or gluten-free options
  • 1/2 cup Beef Stock or vegetable stock
  • 1 tablespoon Soy Sauce or tamari
  • 1/2 teaspoon Ground Black Pepper
  • 1/4 teaspoon Cayenne Pepper optional
  • 1 teaspoon Thyme Leaves or dried thyme
  • 1 tablespoon Jamaican Curry Powder
  • 1/2 teaspoon Ground Allspice or nutmeg and cloves
For the Glaze
  • 1 large Egg for brushing

Method
 

Dough Preparation
  1. In a large mixing bowl, combine plain flour, salt, and ground turmeric. Cut in the cold, frozen unsalted butter and vegetable shortening until the mixture resembles coarse crumbs. Gradually add icy cold water, mixing gently, until a dough forms. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
Filling Preparation
  1. In a skillet over medium heat, add minced beef and cook until browned, about 5-7 minutes. Stir in chopped onions, minced garlic, thyme, black pepper, curry powder, and optional cayenne. Pour in beef stock and soy sauce, simmering until thickened, about 10 minutes. Remove from heat, mix in breadcrumbs, and let cool.
Patties Assembly
  1. Preheat your oven to 190°C (375°F). Roll out the chilled dough to about 3 mm thick. Use a round cutter to cut out circles. Place about 30 ml of cooled filling on one half of each circle, fold over, and seal with a fork.
Baking
  1. Place the patties on a lined baking tray, brush with egg wash, and bake for 20-25 minutes until golden brown. Let cool slightly before serving.
