  • 1/8 teaspoon ground nutmeg optional
  • 1 tablespoon lemon zest use fresh
  • 1 tablespoon lemon juice
For the Cobbler Topping
  • 1 cup all-purpose flour or gluten-free flour
  • 2 teaspoons baking powder gluten-free if needed
  • 1/4 teaspoon salt
  • 1 cup soy milk or other plant-based milk
  • 1/4 cup melted vegan butter or coconut oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish.
  2. In a large mixing bowl, combine sliced peaches with sugar, cornstarch, vanilla, cinnamon, nutmeg, lemon zest, and lemon juice, then spread in the baking dish.
  3. In another bowl, whisk together flour, more sugar, baking powder, and salt.
  4. In a small bowl, whisk together plant-based milk and melted butter.
  5. Combine wet and dry ingredients gently to create a batter, being careful not to overmix.
  6. Drop spoonfuls of the cobbler batter over the peach filling, ensuring some gaps for filling exposure.
  7. Bake for 35-40 minutes until the filling is bubbling and the topping is golden.
  8. Allow to cool slightly before serving warm, ideally with vegan ice cream.
