Ingredients
  

For the Batter
  • 1 cup Butter softened
  • 1 cup Brown Sugar light or dark
  • 1/2 cup White Sugar can substitute with coconut sugar
  • 1 large Egg or 1 flax egg for vegan option
  • 1 teaspoon Vanilla
  • 1 cup Flour all-purpose or gluten-free
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon adjust to taste
  • 1/4 teaspoon Nutmeg can omit or substitute
For the Texture
  • 2 cups Quick Oatmeal rolled oats can be used
  • 1 cup Milk Chocolate Chips or dark chocolate chips

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch baking pan.
  2. In a large mixing bowl, combine softened butter, brown sugar, and white sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add in one egg and vanilla extract. Mix on medium speed until well combined, approximately 1-2 minutes.
  4. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Slowly add the dry ingredients to the creamed mixture. Stir on low until just combined.
  6. Gently fold in quick oatmeal and ½ cup of milk chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan and spread evenly. Sprinkle remaining chocolate chips on top.
  8. Bake for 20-25 minutes or until the center is set and a toothpick comes out clean.
  9. Allow to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  10. Cut into squares and enjoy!
