Directions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch baking pan.
- In a large mixing bowl, combine softened butter, brown sugar, and white sugar. Beat until light and fluffy, about 2-3 minutes.
- Add in one egg and vanilla extract. Mix on medium speed until well combined, approximately 1-2 minutes.
- In a separate bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Slowly add the dry ingredients to the creamed mixture. Stir on low until just combined.
- Gently fold in quick oatmeal and ½ cup of milk chocolate chips until evenly distributed.
- Pour the batter into the prepared baking pan and spread evenly. Sprinkle remaining chocolate chips on top.
- Bake for 20-25 minutes or until the center is set and a toothpick comes out clean.
- Allow to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Cut into squares and enjoy!
