Step-by-Step Instructions
  1. Prepare Marinade: In a bowl, whisk together soy sauce, pineapple juice, ketchup, dark brown sugar, olive oil, sesame oil, garlic, ginger, salt, and pepper. Set aside half for later.
  2. Marinate Chicken: Place chicken in a bag or bowl, pour in half the marinade, cover, and refrigerate for at least 1 hour.
  3. Prep Vegetables: Chop bell peppers and red onion into 1½-inch pieces. Soak wooden skewers in water for 30 minutes.
  4. Assemble Kabobs: Thread marinated chicken onto skewers alternating with pineapple, bell peppers, and red onion.
  5. Grill Kabobs: Preheat grill to medium-high, lightly oil grate, and grill kabobs for about 10 minutes until chicken is cooked through.
  6. Prepare Dipping Sauce: Bring reserved marinade to a boil in a saucepan, stirring for about 5 minutes until thickened.
