Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 cup fresh peaches diced (about 2 medium peaches)
  • 1 medium jalapeño seeded and finely chopped
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon fresh cilantro chopped (for garnish)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the diced peaches, jalapeño, onion, garlic, honey, soy sauce, olive oil, ginger, black pepper, and salt. Mix well to create the marinade.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated.
  4. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  5. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Once done, remove from the oven and let it rest for 5 minutes. Garnish with fresh cilantro before serving.
