- Whisk together sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and black pepper in a bowl to create the marinade.
- Trim excess fat from chicken thighs and cut into 1-inch cubes.
- Pour two-thirds of the marinade over chicken, coating well. Reserve the rest for glazing. Marinate in the fridge for at least 1 hour.
- Preheat grill to high heat, about 400°F.
- Thread marinated chicken onto soaked skewers, leaving space between pieces.
