Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for at least 1 hour to prevent burning.
  2. Whisk together sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and black pepper in a bowl to create the marinade.
  3. Trim excess fat from chicken thighs and cut into 1-inch cubes.
  4. Pour two-thirds of the marinade over chicken, coating well. Reserve the rest for glazing. Marinate in the fridge for at least 1 hour.
  5. Preheat grill to high heat, about 400°F.
  6. Thread marinated chicken onto soaked skewers, leaving space between pieces.
  7. Grill skewers for about 10 minutes on each side until chicken reaches an internal temperature of 165°F.
  8. Brush reserved marinade over skewers in the last few minutes of grilling.
  9. Remove skewers from grill and let rest before serving.
