Step-by-Step Instructions for Kathy’s Favorite Oatmeal Cookies
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet.
  2. In a mixing bowl, whisk together maple syrup, olive oil, ground flax or chia seeds, salt, vanilla extract, and almond flavoring until well blended.
  3. Sift in the spelt flour and rolled oats, then fold in chopped nuts and chocolate chips until just combined.
  4. Roll portions of dough into balls and space them on the baking sheet; flatten each ball slightly.
  5. Bake for approximately 14 minutes or until golden at the edges and still soft in the center.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
