- Preheat your oven to 375°F (190°C). Coat an 8-inch square pan with non-stick spray or line with parchment paper.
- Blend the cottage cheese and eggs in a blender until smooth. Pour into the prepared pan and smooth the top.
- Bake for 30-35 minutes, until set and golden on top.
- Carefully flip the baked mixture over using a large spatula and bake for another 15 minutes.
- In a skillet, cook the ground beef over medium-high heat until browned. Drain excess fat and stir in Italian seasoning and marinara sauce. Simmer for 10 minutes.
- In a bowl, blend the cottage cheese, Parmesan, and egg yolk until smooth.
- Layer the assembled lasagna in the prepared pan: meat sauce, baked cottage cheese mixture, and cheese blend. Repeat until all ingredients are used, finishing with meat sauce on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 15 minutes. Broil for a minute if you want a golden top.
- Let the lasagna cool for a few minutes before garnishing with parsley and slicing into squares. Serve and enjoy!
