  • 1/2 cup Parmesan Cheese Dairy-free substitutes are also suitable.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Coat an 8-inch square pan with non-stick spray or line with parchment paper.
  2. Blend the cottage cheese and eggs in a blender until smooth. Pour into the prepared pan and smooth the top.
  3. Bake for 30-35 minutes, until set and golden on top.
  4. Carefully flip the baked mixture over using a large spatula and bake for another 15 minutes.
  5. In a skillet, cook the ground beef over medium-high heat until browned. Drain excess fat and stir in Italian seasoning and marinara sauce. Simmer for 10 minutes.
  6. In a bowl, blend the cottage cheese, Parmesan, and egg yolk until smooth.
  7. Layer the assembled lasagna in the prepared pan: meat sauce, baked cottage cheese mixture, and cheese blend. Repeat until all ingredients are used, finishing with meat sauce on top.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake for another 15 minutes. Broil for a minute if you want a golden top.
  9. Let the lasagna cool for a few minutes before garnishing with parsley and slicing into squares. Serve and enjoy!
