Step-by-Step Instructions for Maple Bourbon Braised Beef
  1. Preheat your oven to 325ºF (170ºC).
  2. Season the bone-in short ribs with kosher salt, black pepper, and dust with flour.
  3. Heat olive oil in Dutch oven and sear the ribs until golden brown.
  4. Sauté sliced onion, celery, and carrot in the same pot until softened.
  5. Add tomato paste and thyme, cooking for 2 minutes.
  6. Add garlic, bourbon, maple syrup, and beef stock, deglazing the pot.
  7. Return short ribs to pot, cover, and braise in oven for 3 to 3½ hours.
  8. While beef braises, sauté shallots and prepare russet potatoes in boiling water.
  9. Mash drained potatoes with shallots, cream cheese, and butter.
  10. Serve short ribs over mashed potatoes and drizzle with sauce.
