- Preheat your oven to 325ºF (170ºC).
- Season the bone-in short ribs with kosher salt, black pepper, and dust with flour.
- Heat olive oil in Dutch oven and sear the ribs until golden brown.
- Sauté sliced onion, celery, and carrot in the same pot until softened.
- Add tomato paste and thyme, cooking for 2 minutes.
- Add garlic, bourbon, maple syrup, and beef stock, deglazing the pot.
- Return short ribs to pot, cover, and braise in oven for 3 to 3½ hours.
- While beef braises, sauté shallots and prepare russet potatoes in boiling water.
