Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss diced sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
- In the same bowl, mix chicken with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
- Arrange marinated chicken on the other half of the baking sheet.
- Roast for 25 to 30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
- Melt butter in a skillet, add pecans, and toast for 3 to 4 minutes until fragrant.
- Remove from the oven, sprinkle toasted pecans over sweet potatoes, and serve with fresh parsley garnish.
