Ingredients
  

For the Chicken
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1/4 cup Pure Maple Syrup Honey makes a great substitute if needed.
  • 2 tablespoons Apple Cider Vinegar White vinegar works in a pinch.
  • 2 tablespoons Olive Oil Melted coconut oil is a suitable replacement.
  • 1 teaspoon Garlic Powder Onion powder is a useful alternative.
For the Sweet Potatoes
  • 4 cups Sweet Potatoes Yams can be substituted for a similar taste.

For the Garnish
  • 1/4 cup Fresh Thyme Dried thyme can be used—1 tsp of dried equals ¼ cup of fresh.
  • 2 tablespoons Butter Toasting optional pecans.
  • 1/2 cup Chopped Pecans Optional; can be omitted for nut-free version.
  • 1/4 cup Fresh Parsley Feel free to swap with cilantro for a different take.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
  3. In the same bowl, mix chicken with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
  4. Arrange marinated chicken on the other half of the baking sheet.
  5. Roast for 25 to 30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
  6. Melt butter in a skillet, add pecans, and toast for 3 to 4 minutes until fragrant.
  7. Remove from the oven, sprinkle toasted pecans over sweet potatoes, and serve with fresh parsley garnish.
