  • 2 cups Bell Peppers Any variety such as red, green, or orange
  • 1 cup Mushrooms Can substitute with portobello or omit
  • 1 cup Cherry Tomatoes Any small tomato variety works
For the Marinade
  • ¼ cup Olive Oil Can substitute with avocado oil
  • 3 tablespoons Soy Sauce Use Tamari for gluten-free
  • 1 large Lemon Juice Can substitute with lime juice
  • 2 cloves Garlic Can substitute with garlic powder

Method
 

Preparation and Cooking
  1. Wash all vegetables under cool water, slice zucchini and yellow squash, cut bell peppers, halve cherry tomatoes, and slice mushrooms.
  2. In a mixing bowl, whisk olive oil, soy sauce, lemon juice, and minced garlic until combined.
  3. Add all vegetables to the marinade and toss gently to coat. Let sit for at least 15 minutes.
  4. Preheat grill to medium-high heat and oil the grill grates.
  5. Place marinated vegetables on the grill and cook for 10-15 minutes, turning occasionally.
  6. Remove from grill and serve hot or at room temperature.
