Ingredients
  

For the Chicken
  • 4 pieces Boneless, Skinless Chicken Breasts can substitute with thighs for juiciness
  • 2 tablespoons Olive Oil enriches flavor
  • 1 tablespoon Lemon Zest adds brightness
  • 2 tablespoons Lemon Juice essential for flavor
  • 1 tablespoon Honey adds sweetness
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Oregano fresh preferred
  • 1 teaspoon Basil fresh preferred
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 teaspoon Red Pepper Flakes adjust according to spice preference
For the Tzatziki Sauce
  • 1 cup Greek Yogurt full-fat recommended
  • 1/2 cup Cucumber grated and squeezed
  • 1 tablespoon Fresh Dill avoid dried dill
For the Bowl Assembly
  • 2 cups Rice prepared in advance
  • 1 cup Tomatoes chopped
  • 1 cup Cucumber chopped
  • 2 cups Lettuce chopped
  • 1 medium Red Onion sliced
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Fresh Parsley for garnish

Method
 

Marinate Chicken
  1. Combine olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes in a bowl. Whisk until blended. Coat chicken breasts with marinade and marinate for at least 30 minutes.
Prepare Tzatziki
  1. Mix Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and fresh dill in a separate bowl. Stir until well combined and refrigerate for at least 20 minutes.
Prep Veggies
  1. Wash and chop the lettuce, tomatoes, cucumbers, and red onion into bite-sized pieces. Crumble feta and chop parsley.
  2. Cook rice according to package instructions.
Cook Chicken
  1. Remove marinated chicken from fridge to reach room temperature. Preheat air fryer to 380°F and cook chicken for 10–11 minutes or until internal temperature reaches 165°F. Alternatively, use a skillet and cook chicken for 7–8 minutes per side.
Assemble Bowls
  1. After chicken has rested for 5 minutes, slice it. Distribute rice in bowls, layer veggies, top with sliced chicken, tzatziki, crumbled feta, and parsley.
