  • 1 teaspoon Dried Oregano

  • 2 tablespoons Olive Oil
  • 2 cloves Garlic Minced
  • 1 cup Cherry Tomatoes Halved
  • 2 cups Fresh Spinach Can replace with kale or arugula
  • 1/2 cup Feta Cheese Omit for vegan option
  • 2 tablespoons Lemon Juice Freshly squeezed

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering, about 1-2 minutes.
  2. While the oil heats, cut 1 pound of chicken thighs or breasts into bite-sized pieces and season with smoked paprika, oregano, salt, and pepper.
  3. Carefully place the seasoned chicken into the hot skillet and cook undisturbed for 5-7 minutes, then stir occasionally for an additional 5-8 minutes until browned and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Add 2 minced garlic cloves to the remaining oil over medium heat, stirring for about 30 seconds until fragrant.
  6. Add 1 cup of halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
  7. Add 2 cups of fresh spinach to the skillet and stir as it wilts over the next 2-3 minutes.
  8. Return the cooked chicken to the skillet with the vegetables and gently fold them together for 1-2 minutes.
  9. Add crumbled feta cheese and a squeeze of lemon juice for a final touch.
  10. Remove from heat and serve immediately.
