Ingredients
  

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine all ingredients.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld. For best results, chill in the refrigerator for 1 hour before serving.
  5. Serve chilled or at room temperature.
