For the Marinade
  • 1 tbsp Coarse Sea Salt Adjust based on fish type.
  • 1 tsp Freshly Ground Black Pepper Freshly ground is recommended.
  • 120 ml Extra Virgin Olive Oil Avocado oil can be a substitute.
  • 60 ml Fresh Lemon Juice Always use fresh, not bottled!
  • 5 g Dried Oregano Fresh oregano is a substitute.
  • 4 cloves Garlic, minced Can use garlic powder as a substitute.
  • Fresh Rosemary or Thyme (optional) Can substitute with parsley or basil.
For Serving
  • 1 medium Lemon, sliced Use for garnish.
  • 2 tbsp Fresh Parsley, finely chopped Chives can be an alternative.
  • 15 ml High-quality EVOO for drizzling Flavored oils can add twist.

Method
 

Step-by-Step Instructions
  1. Prepare the Firm White Fish by patting it dry, seasoning it lightly with sea salt and black pepper.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, and minced garlic until well-blended.
  3. Generously brush the marinade over both sides of the fish and let it rest at room temperature for 15-30 minutes.
  4. Preheat the grill to medium-high heat (around 400°F or 200°C) and clean and oil the grill grates.
  5. Carefully place the fish skin-side down on the grill and cook for about 4-6 minutes.
  6. Gently flip the fish and grill for another 4-6 minutes, until it flakes easily with a fork.
  7. Transfer the fish to a serving platter, let it rest, then drizzle with olive oil and sprinkle with parsley before serving.
