Method
 

Preparation Steps
  1. Marinate flank steak or sirloin in a mixture of olive oil, cumin, and smoked paprika for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Grill or pan-sear the steak for approximately 4-5 minutes on each side for medium doneness.
  3. While the steak rests, wash and chop bell peppers, cucumbers, and cherry tomatoes into bite-sized pieces.
  4. In a mixing bowl, combine Greek yogurt with chopped herbs and lemon juice, stirring until smooth.
  5. Slice the rested steak against the grain into thin strips and layer over the vegetables in a bowl. Drizzle with yogurt sauce.
