Preparation Steps
- Marinate flank steak or sirloin in a mixture of olive oil, cumin, and smoked paprika for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat. Grill or pan-sear the steak for approximately 4-5 minutes on each side for medium doneness.
- While the steak rests, wash and chop bell peppers, cucumbers, and cherry tomatoes into bite-sized pieces.
- In a mixing bowl, combine Greek yogurt with chopped herbs and lemon juice, stirring until smooth.
- Slice the rested steak against the grain into thin strips and layer over the vegetables in a bowl. Drizzle with yogurt sauce.
