Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes (if desired) then cut them into 1-inch cubes.
  3. In a mixing bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
  4. Spread the sweet potatoes on the baking sheet and roast for 25-30 minutes, stirring halfway through.
  5. Sprinkle crumbled feta and sliced olives on top of the roasted sweet potatoes.
  6. Garnish with fresh herbs before serving warm.
