Ingredients
  

  • 3 cups cantaloupe cubed
  • 3 cups honeydew melon cubed
  • 1 cup strawberries hulled and sliced
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup honey
  • 2 tablespoons lime juice about 1 lime
  • 1 teaspoon lime zest
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 1/4 teaspoon salt

Method
 

  1. In a large bowl, combine the cubed cantaloupe, honeydew melon, and sliced strawberries. Gently toss the fruits together to mix.
  2. In a small saucepan over medium heat, combine honey, lime juice, lime zest, red pepper flakes, and salt. Stir until the honey is melted and the mixture is well combined, about 2-3 minutes. Remove from heat and let cool slightly.
  3. Drizzle the hot honey lime dressing over the fruit salad and toss gently to coat.
  4. Sprinkle the chopped mint leaves on top and serve immediately or chill in the refrigerator for 15-30 minutes before serving for a refreshing treat.
