Step-by-Step Instructions
  1. Start by finely mincing the canned chickpeas and yellow onion. Set aside the minced ingredients.
  2. In a mixing bowl, combine vital wheat gluten, garlic powder, onion powder, smoked paprika, and the optional vegan ham broth. Add the minced chickpeas, onion, soy sauce, oil, BBQ sauce, and half of the water. Mix thoroughly and knead until well incorporated, about 2-3 minutes.
  3. Divide the seitan dough into equal portions and shape each one into a rectangle resembling ribs. Score the surface lightly to mimic traditional ribs, and insert sticks if using.
  4. Lightly grease a baking dish and arrange the shaped ribs inside. Rub with a mixture of brown sugar and preferred spices, then add broth or water to keep the ribs moist.
  5. Preheat your oven to 375°F (190°C). Cover and bake for 20 minutes.
  6. Uncover and brush ribs with BBQ sauce. Increase oven temperature to 425°F (220°C) and bake uncovered for an additional 10-15 minutes.
  7. Once baking is complete, let the ribs rest for 10-15 minutes before serving.
