Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef can swap for ground turkey or plant-based crumbles
  • 3 cloves Minced Garlic
  • 1 tbsp Dried Cilantro Leaves or fresh cilantro
  • 1/2 tsp Black Pepper to taste
  • 1 tsp Salt to taste
  • 1 tbsp Hot Pepper Sauce optional
  • 2 tbsp Taco Seasoning or chili powder and cumin blend
  • 1/4 cup Chopped Green Onions or shallots
  • 1 cup Chopped Sweet Peppers or zucchini
  • 1 cup Frozen Corn fresh corn can be used
  • 1 can Canned Diced Tomatoes with Green Chilies or fresh tomatoes
  • 1 large Egg or flax egg for vegan version
  • 1 cup Crushed Tortilla Chips gluten-free if necessary
For the Topping
  • 1 cup Salsa low-sodium for healthier choice
  • 1 cup Shredded Mexican Cheese Blend or your favorite cheese; omit for vegan

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C) and chop all vegetables.
  2. In a large mixing bowl, combine all meatloaf ingredients and mix until just combined.
  3. Shape the mixture into a loaf and place in a greased baking dish.
  4. Bake uncovered for 30 minutes.
  5. Remove and top with salsa, crushed tortilla chips, and cheese.
  6. Increase temperature to 375°F (190°C) and bake for an additional 35 minutes.
  7. Let rest for 10 minutes before slicing and serving.
