  • 4 ripe peaches pitted and sliced
  • 1 cup fresh mozzarella balls drained
  • 1 cup arugula or mixed greens
  • 1/2 cup prosciutto thinly sliced
  • 1/4 cup walnuts toasted and roughly chopped
  • 1/4 cup fresh basil leaves torn
  • 1/4 cup balsamic glaze
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced peaches, mozzarella balls, arugula, and prosciutto.
  2. Gently toss the ingredients together to mix them evenly.
  3. Sprinkle the toasted walnuts and torn basil leaves over the top.
  4. Drizzle the balsamic glaze over the salad and season with salt and pepper to taste.
