  • 1 Large Egg or chia/flax egg for egg-free version
  • 1 cup Unsweetened Applesauce or mashed banana
  • 1/2 cup Honey or Maple Syrup agave or brown rice syrup can be used
  • 1 teaspoon Pure Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 cups Whole Wheat or Spelt Flour or white whole wheat flour
Optional Add-Ins
  • 1/2 cup Chopped Walnuts optional, can replace with chocolate chips

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan with parchment paper and cooking spray.
  2. In a bowl, whisk together egg, applesauce, honey, vanilla extract, cinnamon, baking soda, baking powder, and salt.
  3. Gently fold in the shredded zucchini, being careful not to over-mix.
  4. Sift in the flour and stir until just combined. Avoid overmixing.
  5. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes.
  6. Cool in the pan for 10 minutes, then move to a wire rack to cool completely for 30 minutes before slicing.
