- Preheat your oven to 350°F (175°C) and grease a 9” x 5” loaf pan.
- Whisk together all-purpose flour, ground cinnamon, baking powder, baking soda, and salt in a medium bowl.
- In a large bowl, beat unsalted butter, light brown sugar, and creamy peanut butter together until fluffy.
- Add large eggs one at a time, then mix in vanilla extract.
- Gradually add the flour mixture and sour cream, alternating between the two.
- Fold in mashed bananas and optional chopped nuts, mixing until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
