Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9” x 5” loaf pan.
  2. Whisk together all-purpose flour, ground cinnamon, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, beat unsalted butter, light brown sugar, and creamy peanut butter together until fluffy.
  4. Add large eggs one at a time, then mix in vanilla extract.
  5. Gradually add the flour mixture and sour cream, alternating between the two.
  6. Fold in mashed bananas and optional chopped nuts, mixing until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 50-55 minutes.
  8. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
