Step‑by‑Step Instructions
  1. Prep Ingredients: Finely chop the onion and mince the garlic. Clean and slice the mushrooms, and slice the seitan into thin strips.
  2. Sauté Onions: Heat olive oil in a skillet over medium heat, add onions and cook for 5-7 minutes until translucent.
  3. Add Garlic: Stir in minced garlic and sauté for another 1-2 minutes.
  4. Cook Mushrooms: Add sliced mushrooms and cook for 8-10 minutes until golden brown.
  5. Brown Seitan: Push mushrooms to the side and brown seitan strips for 3-4 minutes.
  6. Make Sauce: Sprinkle flour over the mixture, stir for 2 minutes, then add vegetable broth gradually and stir until smooth.
  7. Add Remaining Ingredients: Stir in sour cream, mustard, soy sauce, paprika, and thyme, let simmer for 5-7 minutes.
  8. Cook Pasta: Boil salted water and cook noodles or pappardelle according to package instructions.
  9. Combine & Serve: Mix pasta with sauce or serve sauce over pasta, garnish with parsley and lemon.
