Ingredients
  

  • 1 cup Oreo cookie crumbs about 15 cookies
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 8 ounces cream cheese softened
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil optional

Method
 

  1. In a large mixing bowl, combine the Oreo cookie crumbs, peanut butter, powdered sugar, and softened cream cheese. Mix until well combined and smooth.
  2. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Place the balls on a baking sheet lined with parchment paper. Repeat until all the mixture is used.
  3. Once all the balls are formed, freeze them for about 30 minutes to firm up.
  4. While the balls are chilling, melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  5. Remove the balls from the freezer. Dip each ball into the melted chocolate, using a fork to coat it evenly. Allow any excess chocolate to drip off before placing the chocolate-covered balls back on the parchment-lined baking sheet.
  6. Once all the balls are coated, refrigerate them for at least 30 minutes to set the chocolate.
