Ingredients

  • 2 cups Graham Cracker Crumbs You can also use crushed cookies like Oreos.
  • 1/2 cup Unsalted Butter Melt before mixing.
  • 1/4 cup Strawberry Jam Can substitute with raspberry or other red fruit jam.
For the Cheesecake Layer
  • 8 oz Cream Cheese Soften before use.
  • 1/2 cup Powdered Sugar Adjust according to taste.
  • 8 oz Cool Whip or Whipped Cream You can use homemade whipped cream.
For the Blueberry Layer
  • 1 can Blueberry Pie Filling Ensure it's thick for best texture.
  • 1 cup Crushed Pineapple Drain well before use.
  • 1 tablespoon Gelatin Adjust amounts based on preference for firmness.
  • a few drops Red Gel Food Coloring Add to achieve desired shade.
For the Toppings
  • 1 cup Fresh Strawberries Use ripe, sweet berries.
  • 1 cup Fresh Blueberries Use ripe, sweet berries.
  • 1/2 cup White Chocolate Chips Melt and drizzle on top.

Method
 

Instructions
  1. Prepare the Crust: Crush the graham crackers until finely ground. Melt the unsalted butter and mix with the crumbs and strawberry jam. Press mixture into a rectangular dish and freeze for 20 minutes to set.
  2. Make the Cheesecake Layer: Beat softened cream cheese and powdered sugar until smooth. Fold in Cool Whip and spread over the crust. Refrigerate for at least 1 hour.
  3. Prepare the Blueberry Layer: Mix blueberry pie filling, drained crushed pineapple, and gelatin until thick. Gently pour over the cheesecake layer and chill for 3-4 hours.
  4. Top with Whipped Cream and Berries: After the blueberry layer has set, spread whipped cream on top and decorate with fresh strawberries and blueberries. Drizzle melted white chocolate for a finishing touch.
