  • 0.33 cups Brown sugar
  • 0.5 cups Oats Quick-cooking
  • 1 tablespoon Flour

Method
 

Instructions
  1. Prep Zucchini: Grate two medium zucchinis and squeeze out excess moisture.
  2. Mix Wet Ingredients: In a bowl, combine oil, sugar, and eggs, then fold in zucchini.
  3. Combine Dry Ingredients: Whisk flour, baking soda, salt, and cinnamon together.
  4. Combine Wet and Dry: Fold dry ingredients into the wet mixture until just combined.
  5. Prepare Streusel: Mix brown sugar, oats, cinnamon, and flour until crumbly.
  6. Assemble: Pour batter into a greased loaf pan and sprinkle with streusel topping.
  7. Bake: Preheat oven to 350°F and bake for 50-60 minutes until a toothpick comes out clean.
  8. Cool: Let cool in the pan for 10 minutes before transferring to a wire rack.
