Steps
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for about 5 minutes on each side until golden brown.
  2. Whisk together BBQ sauce and honey in a small bowl. Pour this mixture evenly over the seared chicken in the skillet.
  3. Stir in 1 cup of uncooked rice and 1 ½ cups of chicken broth into the skillet, ensuring the rice is submerged in the sauce.
  4. Raise heat to a gentle simmer, cover with a lid, and reduce heat to low. Let it simmer for about 20 minutes, or until rice is tender.
  5. With 5 minutes left on the timer, sprinkle mixed vegetables on top of the rice and chicken without stirring. Cover to steam until vibrant.
  6. After cooking, remove from heat and let sit covered for 5 minutes. Fluff the rice gently with a fork before serving.
