Ingredients
  

For the Chicken
  • 1.5 pounds Chicken Breasts Cut into bite-sized pieces.
For the Veggies
  • 1 bunch Asparagus Cut into 1-inch pieces.
  • 1 pint Cherry Tomatoes Halved.
For the Pasta
  • 9 ounces Refrigerated Cheese Tortellini Fresh preferred, use frozen if needed.
For the Flavor
  • 2 tablespoons Olive Oil For roasting.
  • 1 cup Pesto Store-bought or homemade.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper Freshly cracked.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine chicken with olive oil, salt, and pepper in a mixing bowl. Toss to coat.
  3. Prepare asparagus and halve cherry tomatoes.
  4. Spread the seasoned chicken on one side of a large baking sheet.
  5. Scatter tortellini, asparagus, and tomatoes around the chicken.
  6. Drizzle the pan with pesto and toss everything together.
  7. Bake for 20-25 minutes until chicken reaches 165°F (75°C).
  8. Allow to rest, then serve garnished with Parmesan cheese or basil.
