Ingredients

For the Patty Melts
  • 1 pound Ground Beef Use 80/20 for the best texture
  • 2 medium Yellow Onions Thinly sliced, caramelize slowly
  • 4 slices Swiss Cheese Can substitute with cheddar or American
  • 4 slices Rye Bread Sourdough or Texas toast are good substitutes
  • 4 tablespoons Butter For crisping the bread
For the Secret Sauce
  • 1/2 cup Mayonnaise Can use Greek yogurt for a lighter version
  • 2 tablespoons Ketchup
  • 1 tablespoon Dijon Mustard Yellow mustard can be used as a substitute
  • 2 tablespoons Worcestershire Sauce Omit if avoiding gluten
  • 1/4 cup Pickles or Relish Can be omitted for simple mustard mayo
  • 1 teaspoon Smoked Paprika Regular paprika can be a substitute

Equipment

  • Skillet
  • Mixing Bowl

Method

Step-by-Step Instructions
  1. In a skillet, melt 2 tablespoons of butter over medium-low heat. Add sliced yellow onions, sprinkle with salt, and sauté for 25-30 minutes until golden brown.
  2. While the onions cook, mix ½ cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon Dijon mustard, and 2 tablespoons diced pickles in a bowl for the secret sauce.
  3. In a mixing bowl, combine 1 pound ground beef, 1 tablespoon Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon smoked paprika. Shape into 4 patties.
  4. Heat a skillet over medium-high heat. Cook patties for 3-4 minutes on each side until browned and registers 160°F for medium doneness.
  5. Butter one side of each slice of rye bread. On the unbuttered sides, spread a layer of secret sauce. Assemble patty melts with cheese, onions, and bread.
  6. In the same skillet, cook the assembled sandwiches for 3-4 minutes on each side, pressing down with a spatula until golden brown and cheese is melted.

Notes

Take your time caramelizing onions for optimal sweetness. Ensure patties are larger than the bread slices as they will shrink while cooking. Grill wisely to meld flavors.
