- In a medium mixing bowl, whisk together the flour, baking soda, sugar, and salt. Set aside.
- In a separate bowl, whisk the egg until frothy. Add buttermilk and oil, and blend until smooth.
- Pour the wet mixture into the dry ingredients. Fold gently until just combined; small lumps are okay.
- Preheat a nonstick griddle or skillet over medium-high heat for about 5 minutes.
- Lightly grease the griddle and pour 1/4 cup of batter for each pancake. Cook for 2-3 minutes until edges set.
- Flip each pancake and cook for another 1-2 minutes until golden brown.
- Serve immediately topped with butter and maple syrup.
