Preparation
  1. In a medium mixing bowl, combine fish sauce, soy sauce, and brown sugar. Add minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder. Whisk together until well blended.
  2. Coat chicken thighs thoroughly with the prepared marinade and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat, about 15-20 minutes before grilling.
  4. Grill the marinated chicken for 5-7 minutes on each side until an internal temperature of 165°F is reached.
  5. Remove chicken from grill and let rest for 5 minutes before slicing.
  6. Garnish chicken with fresh cilantro and lime wedges, serve with jasmine rice or a salad.
