- In a medium mixing bowl, combine fish sauce, soy sauce, and brown sugar. Add minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder. Whisk together until well blended.
- Coat chicken thighs thoroughly with the prepared marinade and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat, about 15-20 minutes before grilling.
- Grill the marinated chicken for 5-7 minutes on each side until an internal temperature of 165°F is reached.
- Remove chicken from grill and let rest for 5 minutes before slicing.
