  • 4 medium Russet Potatoes or frozen fries
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
For the Cheesesteak Topping
  • 1 pound Thinly Sliced Steak (Ribeye or Sirloin) or portobello mushrooms
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 cloves Minced Garlic
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dried Oregano
For the Cheese Sauce
  • 2 tablespoons Butter for roux
  • 2 tablespoons All-Purpose Flour
  • 1 cup Milk
  • 1 cup Provolone Cheese shredded
  • 1 cup White Cheddar Cheese shredded
  • 1/4 teaspoon Cayenne Pepper optional
Optional Garnishes
  • 1/4 cup Chopped Green Onions for topping
  • Pickled Jalapeños optional
  • Ketchup for serving
  • Mustard for serving

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut your russet potatoes into thick fries, about 1/4 to 1/2 inch wide.
  3. In a large mixing bowl, toss the fries with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
  4. Spread the seasoned fries in a single layer on a greased baking sheet.
Cooking
  1. Bake the fries for 20-25 minutes, flipping halfway through until golden brown and crispy.
  2. While the fries are baking, heat olive oil in a skillet and sauté sliced onion and green bell pepper for 5-7 minutes until soft and caramelized.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Cook the thinly sliced steak in the same skillet for 3-4 minutes until browned.
  5. Add Worcestershire sauce and dried oregano, tossing to combine.
  6. In a separate saucepan, melt butter and whisk in flour to create a roux.
  7. Gradually add milk and cook until the sauce thickens, then stir in cheeses until melted.
  8. Layer crispy fries on a platter, top with steak and veggies, and drizzle with cheese sauce.
  9. Garnish with green onions and optional jalapeños before serving.
