Step-by-Step Instructions
  1. In a bowl, whisk together soy sauce, pineapple juice, ketchup, dark brown sugar, olive oil, sesame oil, minced garlic, and fresh ginger. Season with salt and pepper. Marinate chicken in the mixture for at least 1 hour.
  2. Wash and chop the bell peppers and red onion into bite-sized pieces. Soak wooden skewers in water for at least 30 minutes.
  3. Thread marinated chicken, pineapple, bell peppers, and red onion onto skewers.
  4. Preheat the grill to medium-high heat. Brush the grates with olive oil.
  5. Grill kebabs for about 10 minutes, turning occasionally until chicken is cooked through and pineapple is caramelized.
