- Brew a strong coffee using 1 shot of espresso or ½ cup of strong coffee. Allow it to cool for about 5-10 minutes.
- In a mixing bowl, combine 1 cup of coconut milk, 1 tablespoon of beet juice, and 1 tablespoon of honey or sugar. Whisk until smooth.
- Fill a tall glass with ice cubes, packing them well.
- Pour the pink coconut milk mixture into the prepared glass until about three-quarters full.
- Carefully pour the cooled coffee over the back of a spoon into the glass to create layers.
