  • 1 cup Canned Pumpkin Puree Avoid pumpkin pie filling
  • 1/2 cup Breadcrumbs Whole wheat or panko recommended
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 cup Fresh Sage Finely chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Red Pepper Flakes Optional
  • 2 tablespoons Olive Oil For searing
  • 1 Large Egg Acts as a binder
  • 1 small Onion Chopped
  • 2 cloves Garlic Minced

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, canned pumpkin puree, breadcrumbs, Parmesan cheese, egg, onion, garlic, sage, salt, pepper, nutmeg, and optional red pepper flakes. Gently mix until just combined.
  3. Scoop out portions of the mixture and shape them into 1 to 1.5-inch meatballs. Place them on the prepared baking sheet.
  4. Heat olive oil in a skillet over medium heat. Add meatballs in batches, searing each side for about 3-4 minutes or until golden brown.
  5. Transfer the seared meatballs back to the baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Allow the meatballs to rest for a minute before serving. Serve with sauce or on mashed potatoes, garnished with fresh sage or extra Parmesan.
