- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground turkey, canned pumpkin puree, breadcrumbs, Parmesan cheese, egg, onion, garlic, sage, salt, pepper, nutmeg, and optional red pepper flakes. Gently mix until just combined.
- Scoop out portions of the mixture and shape them into 1 to 1.5-inch meatballs. Place them on the prepared baking sheet.
- Heat olive oil in a skillet over medium heat. Add meatballs in batches, searing each side for about 3-4 minutes or until golden brown.
- Transfer the seared meatballs back to the baking sheet and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
- Allow the meatballs to rest for a minute before serving. Serve with sauce or on mashed potatoes, garnished with fresh sage or extra Parmesan.
