  • 2 tablespoons Spring Onions or chives/green garlic

Step‑by‑Step Instructions for Spicy Miso Noodles
  1. Boil water in a large pot and cook the dried ramen noodles according to package instructions (3-4 minutes) until tender.
  2. While noodles cook, melt butter in a bowl, then stir in white miso, chili oil, and spring onions until creamy.
  3. In a skillet, heat chili oil over medium heat. Crack in the egg and cover, frying for 2-3 minutes until the white is set but the yolk remains runny.
  4. Drain the cooked noodles, reserving half a cup of noodle water. Let noodles sit to cool slightly.
  5. Mix the drained noodles with the miso sauce, adding reserved noodle water to reach desired consistency.
  6. Serve the noodles topped with the fried egg, extra chili oil, and minced spring onions.
