  • 6 slices Whole Grain Bread
  • 6 slices Sourdough Bread
  • 6 slices Tea Sandwich Bread
For the Filling
  • 4 ounces Cream Cheese softened
  • 1/2 cup Greek Yogurt
  • 1 tablespoon Fresh Dill chopped
  • 1 tablespoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Pepper
For the Veggies
  • 2 medium Cucumbers English or Persian preferred
  • optional Radishes for added crunch

Method
 

Preparation
  1. Thinly slice the cucumbers, about 1/8 inch thick. Sprinkle with salt and let sit for 10-15 minutes. Pat dry.
  2. In a mixing bowl, combine cream cheese, Greek yogurt, lemon zest, lemon juice, dill, salt, and pepper. Blend until smooth.
  3. Spread filling on a slice of bread, layer cucumber slices, top with another slice of bread, pressing gently.
  4. Wrap the sandwiches in plastic wrap and chill for 10 minutes.
  5. Cut the chilled sandwiches into desired shapes and serve.
