Method
 

Steps
  1. Wash the cucumbers under cold running water and slice them into 1/8-inch rounds.
  2. Place cucumber slices in a colander, sprinkle with kosher salt, and let sit for about 10 minutes.
  3. Rinse the salted cucumbers under cold water and pat dry.
  4. In a medium bowl, whisk together rice vinegar, olive oil, granulated sugar, and black pepper until smooth.
  5. In a large mixing bowl, combine dried cucumber slices, red onion, optional ingredients, and fresh herbs. Toss to combine.
  6. Pour the dressing over the cucumber mixture and toss until well coated.
