- In a small bowl, combine dried basil, dried oregano, olive oil, and balsamic vinegar. Season with salt and black pepper to taste. Whisk until smooth and set aside.
- Slice ends off cucumbers, lightly score the surface with a fork, and dice into bite-sized pieces. Place in a large mixing bowl.
- Quarter cherry tomatoes and add to the bowl with the diced cucumbers. Optionally, add thinly sliced red onion.
- Add mozzarella to the bowl, ensuring an even distribution.
- Pour the prepared dressing over the salad and gently toss. Allow resting at room temperature for about 10 minutes.
