  • 1 tbsp Dried Basil Or use fresh basil (3 times more)
  • 1 tbsp Dried Oregano Or use fresh oregano (3 times more)
  • 3 tbsp Olive Oil
  • 2 tbsp Balsamic Vinegar Or substitute with red wine vinegar or white balsamic
  • Salt To taste
  • Black Pepper To taste
Salad
  • 2 cups Cucumber English or Persian preferred
  • 1 cup Cherry Tomatoes Quartered
  • 1/2 medium Red Onion Optional, thinly sliced
  • 8 oz Fresh Mozzarella Pat dry to avoid moisture

Method
 

Preparation
  1. In a small bowl, combine dried basil, dried oregano, olive oil, and balsamic vinegar. Season with salt and black pepper to taste. Whisk until smooth and set aside.
  2. Slice ends off cucumbers, lightly score the surface with a fork, and dice into bite-sized pieces. Place in a large mixing bowl.
  3. Quarter cherry tomatoes and add to the bowl with the diced cucumbers. Optionally, add thinly sliced red onion.
  4. Add mozzarella to the bowl, ensuring an even distribution.
  5. Pour the prepared dressing over the salad and gently toss. Allow resting at room temperature for about 10 minutes.
