Ingredients
  

For the Salad
  • 4 cups Mixed Salad Greens any combination of spinach, arugula, or romaine
  • 1 cup Strawberries hulled and sliced
  • 1 whole Orange segmented
  • 1/2 cup Cucumber thinly sliced
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Feta Cheese crumbled (optional)
  • 1/4 cup Walnuts or Pecans toasted
For the Citrus Vinaigrette
  • 1/4 cup Olive Oil
  • 2 tablespoons Orange Juice
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey or Maple Syrup adjust to taste
  • Salt and Pepper to taste

Method
 

Prepare the Citrus Vinaigrette
  1. In a medium bowl, whisk together olive oil, orange juice, lemon juice, and honey or maple syrup until well combined and slightly emulsified. Season with salt and pepper to taste and set aside.
Combine the Salad Ingredients
  1. In a large serving bowl, add mixed salad greens, strawberries, segmented orange, and thinly sliced cucumber. Gently add red onion and toss the ingredients lightly to combine.
Drizzle and Toss
  1. Drizzle the prepared citrus vinaigrette over the salad and toss gently to coat all ingredients.
Add the Finishing Touches
  1. Just before serving, sprinkle crumbled feta cheese and toasted walnuts or pecans over the top.
Serve Immediately
  1. Serve the salad immediately to maintain freshness, in a wide, shallow bowl for presentation.
