Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with aluminum foil, spraying it with cooking spray.
  2. In a skillet, heat olive oil and sauté the diced yellow onion and bell pepper for 5-6 minutes until soft. Add garlic and cook for another minute, then cool.
  3. In a large mixing bowl, combine ground beef, crushed Ritz crackers, milk, eggs, salt, black pepper, garlic powder, dried parsley, and cooled vegetables. Mix gently until just combined.
  4. Transfer the mixture to the baking sheet and shape it into a loaf. Bake for 35 minutes.
  5. Prepare the glaze by whisking together ketchup, brown sugar, Worcestershire sauce, and Dijon mustard.
  6. After 35 minutes, pour the glaze evenly over the meatloaf and return to the oven for another 15-25 minutes until the internal temperature reaches 160°F (71°C).
  7. Optionally, broil for 2-3 minutes for a caramelized finish. Watch closely to avoid burning.
  8. Let the meatloaf rest for 10-15 minutes, then slice and serve warm.
