  • 2 large Peppers different colors for visual appeal
  • 1 medium Onion sliced
  • 2 cloves Garlic finely diced

  • 1 can Skinned Plum or Chopped Tomatoes good quality
  • 1 cup Chicken Stock or vegetable stock
  • 1 tablespoon Tomato Paste heaped
  • 1 tablespoon Red Wine Vinegar
  • ½ teaspoon Dried Basil
  • ½ teaspoon Oregano
  • ¼ teaspoon Chili Flakes adjust based on spice tolerance
  • Sugar to taste
  • Salt to taste
  • Pepper to taste
For Assembly
  • 4 rolls Sub Rolls/Baguettes/Italian Rolls warmed
  • 4 tablespoons Butter for spreading
  • 4 pinches Parmesan for garnish
  • Olive Oil for frying

Method
 

Step-by-Step Instructions
  1. Cook the Sausages: Heat olive oil in a large frying pan over low-medium heat. Add sausages and fry for 15-20 minutes, turning until browned.
  2. Sauté the Vegetables: Remove sausages and add sliced peppers and diced onion to the pan. Sauté for 5-7 minutes until softened.
  3. Add Garlic and Tomato Paste: Stir in garlic and cook for 1 minute. Add tomato paste and fry for 2 minutes until fragrant.
  4. Create the Sauce: Deglaze the pan with chicken stock, add tomatoes, vinegar, basil, oregano, chili flakes, salt, and pepper. Simmer gently.
  5. Simmer with Sausages: Slice sausages and add back to the pan. Simmer for 15-20 minutes until sauce thickens.
  6. Prepare the Rolls: Spread butter on sub rolls and warm in a preheated oven at 350°F for 5-7 minutes.
  7. Assemble the Sandwich: Fill rolls with sausage mixture, top with Parmesan cheese, and serve.
