Preparation
  1. Begin by cutting fresh broccoli crowns into even florets, rinse and dry them thoroughly.
  2. In a large cast iron skillet, heat olive oil over medium heat until shimmering.
  3. Add broccoli florets to the skillet, cooking undisturbed for 3-4 minutes.
  4. Gently stir and continue cooking for an additional 2 minutes until crisp-tender.
  5. Pour in a splash of water, cover with a lid, and steam for 2 minutes.
  6. Remove lid, add garlic, and stir for 30 seconds until fragrant.
  7. Season with salt, pepper, and lemon zest, then serve immediately.
