For the Curry

  • 2 pounds beef chuck or stewing beef can replace with chicken thighs
  • 1 cup pureed tomato crushed tomatoes can serve as an alternative
  • 2 tablespoons tomato paste substitute with additional tomato puree if needed
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust according to preference
  • 2-3 cups beef broth or water broth enhances flavor depth
  • 2 tablespoons white vinegar or lemon juice lemon juice is recommended for freshness
  • 1 teaspoon sugar (optional) honey can serve as a natural sweetener
  • 1/4 cup fresh cilantro (for garnish) can substitute with parsley

Method
 

Preparation Steps
  1. Combine ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala in a small bowl. Set aside.
  2. Heat oil in a deep pan. Add onions and cook until golden brown, about 10 minutes.
  3. Add garlic and ginger, stirring in optional dried red chilies. Cook for 1-2 minutes.
  4. Raise heat and add the beef pieces, searing for about 5-7 minutes until browned.
  5. Sprinkle the spice mix over beef and toast for about 30 seconds.
  6. Incorporate the pureed tomato, tomato paste, salt, black pepper, and vinegar/lemon juice. Cook for about 5 minutes.
  7. Pour in beef broth or water. Bring to a boil, then reduce heat and simmer for 60-75 minutes.
  8. Taste the curry and adjust seasoning. Garnish with cilantro before serving.
