Step-by-Step Instructions
  1. Start by cubing boneless, skinless chicken into bite-sized pieces. Combine with soy sauce, sesame oil, ginger, and garlic. Cover and refrigerate for at least 20 minutes, up to 2 hours.
  2. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, and honey until smooth. Adjust spiciness to your taste.
  3. Soak wooden skewers in water for at least 30 minutes. Thread marinated chicken pieces onto skewers, alternating with colorful vegetables or pineapple.
  4. For grilling, preheat the grill to medium-high and cook skewers 3-5 minutes per side until cooked through. For baking, set the oven to 400°F and bake for 15-20 minutes.
