Step-by-Step Instructions
  1. Pat the shrimp dry with paper towels and coat with blackening seasoning.
  2. Heat olive oil in a skillet, then add shrimp and cook for 1-2 minutes on each side until blackened.
  3. Cook egg noodles in salted water according to package instructions.
  4. In the same skillet, add olive oil and sauté onion and mushrooms for 5 minutes, then add garlic.
  5. Pour in chicken broth and bring to a simmer, then mix in sour cream and season with salt and pepper.
  6. Return the shrimp and noodles to the skillet, toss to coat, and garnish with parsley before serving.
