  • 3 cloves Garlic (minced) Garlic powder can work in a pinch.
  • 1 small Shallot (diced) Yellow onion can be used as a substitute.
  • to taste Kosher Salt Sea salt or table salt can be used.
  • to taste Freshly Ground Black Pepper
For the Kabobs
  • 1.5 pounds Boneless, Skinless Chicken Thighs Chicken breasts can be substituted.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine olive oil, lemon juice, lemon zest, paprika, oregano, basil, thyme, garlic, and shallot. Add salt and pepper to taste. Stir well, then add chicken. Cover and refrigerate for at least 2 hours or overnight.
  2. After marinating, remove chicken and drain excess marinade. Thread chicken onto skewers, leaving space between pieces. Preheat grill to medium and brush with remaining olive oil. Season chicken with salt and pepper.
  3. Place skewers on the grill, turning occasionally. Grill for about 10 minutes, until internal temperature reaches 165°F. The kabobs should be charred.
  4. Remove from grill and let rest for 5 minutes. Serve with grilled pita, fresh veggies, and tzatziki sauce.
