  • 1 cup shredded cheese (e.g., Cheddar) any good melting cheese works
  • 2 tablespoons fresh lime juice elevates flavors
  • 1/4 cup fresh cilantro substitute with parsley if preferred

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium-high heat until it shimmers, about 1-2 minutes.
  2. Sauté the cubed potatoes for about 6 minutes, stirring occasionally, until golden brown and fork-tender.
  3. Add the ground beef, crumbling it as it cooks. Incorporate diced onion and chopped red bell pepper. Cook for 5-7 minutes until browned and tender.
  4. Stir in diced green chiles, chili powder, cumin, and smoked paprika. Cover and cook for another 6-8 minutes.
  5. Sprinkle shredded cheese over the top of the skillet and cover again, allowing it to melt for about 1-2 minutes.
  6. Garnish with freshly chopped cilantro and serve directly from the skillet.
