  • 1 cup Cheddar Cheese, shredded Monterey Jack or Pepper Jack can be used.
  • 1 cup Mozzarella Cheese, shredded Use a blend of favorite melting cheeses.
  • 2 tablespoons Olive Oil Avocado oil can be another option.
  • 1 teaspoon Chili Powder Taco seasoning can be used as an alternative.
  • 1 teaspoon Cumin Coriander can be used as a substitute.
  • 1/2 teaspoon Paprika Smoked paprika can add a smoky touch.
  • 1/2 teaspoon Salt Adjust according to your taste.
  • 1/2 teaspoon Black Pepper Adjust according to your taste.
  • Fresh Cilantro For garnish, omit if not a fan.
  • Lime Wedges For serving, optional but recommended.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and set aside a 9x13-inch casserole dish.
  2. In a large skillet, heat olive oil and sauté chicken breasts seasoned with chili powder, cumin, paprika, salt, and pepper until cooked through.
  3. In a mixing bowl, combine sour cream, softened cream cheese, and half of the shredded cheddar and mozzarella cheeses until smooth.
  4. Gently fold in sautéed chicken, bell peppers, onion, and minced garlic into the creamy mixture.
  5. Transfer the mixture into the greased casserole dish, spreading it evenly.
  6. Top the casserole with the remaining cheeses.
  7. Bake uncovered for 20-25 minutes until bubbly and golden.
  8. Let it cool slightly, garnish with cilantro, and serve with lime wedges.
